^^^^ live off of bean burritos with veggies/salsa, peanut butter, and grilled cheese.  :) Seriously, that's what I did for the first few years of vegetarianism.

I should probably mention I am allergic to bread haha so I can't go too overboard.

Oh geeze, that sounds terrible though I'm sure you've grown used to it. Like the person that posted above said, soups and such are good deals too. You can make up a big pot of random yumminess and it'll last you a week.

I lived on rice and beans for a summer in 2008. I lost tons of weight and my skin colour changed to an unhealthy shade of yellowy. I was also drinking tons, which is vegetarian.
I also lived on date food. I was a slut for food.

Greek yogurt with fruit, I also put some honey bunches of oats on top.....great breakfast or replacement for dessert.  I eat a ton and haven't tried to diet at all and have lost around 50-60lbs.  I gained the weight from eating dorm food (pizza/cake were all that was edible) and being sick for months so no exercise.  It hasn't be steady since during the spring I dated a girl who was a bad influence with fast food but just eat that Greek yogurt, cut out all butter and do olive oil.  High carb, medium protein and a decent amount of veggies.  I live on chicken myself but mushrooms and tofu could work making great pastas and stir fry respectively.  Also spinach is good times!

Onions, garlic, olive oil, a can of tomatoes, veggie, a little bit of dried herbs (Italian seasoning works if you want to be lazy) frozen pasta (13 oz of ravioli or tortellini), a light dusting of cheese and some crushed red pepper and I am good for 2-3 meals.  I made something similar today along with some chicken meat but mushrooms could work especially if your veggie is spinach!

Falafel is another great option, either bake it on a sheet with olive oil sprayed on or fry just make sure the oil is hot so the falafel doesn't get greasy.

Also I almost forgot, my initial weight loss was thanks to Vietnamese food, especially bun.  This is bean sprouts, cucumber, crushed peanuts, and in my case grilled pork (you can put any protein in), then cover with sweet fish sauce (nuoc mam).  The hardest part for me was the pork so if you are just making it on your own veggie style once you get the protein made it is just like making a salad, nouc mam is about as easy as any dressing to make.

Whenever I have a veggie kick, I love black beans with avocado, tomato, sprouts, and a little bit of monterey jack cheese shredded on top.  Eat it with rice, and it is nomming delicious.  I don't have too many other recipes, but I do know that red and yellow curry makes everything taste better.  Mmmmm.

The obvious answer from me is home-made curry.  Mixed vegetables chopped or processed to be very small (make sure it has something like chickpeas in it for added protein.)

Home made has less salt, sugar and fat than the take-away equivalent but can taste better because it is possible to adjust the blend of spices to taste. Also remember that it’s important to take your time to chew food so that your body can adjust to feeling full. Seems counterintuitive for curry because you wouldn’t think there is much to chew but simply savouring a good tasting curry should be enough to ensure you do.

A good tasting spice blend for me is approximately:

1 teaspoon of dried chillies
¼ teaspoon of ground ginger
2 teaspoons of ground coriander
1 teaspoon of ground cumin
1 teaspoon of ground paprika
½ teaspoon of ground turmeric

This is probably not great tasting for everyone but as a person that would not willingly eat the same vegetables unseasoned, it is something I can eat several times a week (it beats cheap curry powder anyway). I usually eat curry with a small portion of whole grain rice that I flavour with a blend of Cinnamon,turmeric, paprika, cloves, cardamoms & bay-leaves. Garlic, onion, a small amount of margarine and vegetable stock also go in.

The gravy used is generally a light chicken, veal or turkey gravy. One could argue that the dish is veggie but not vegan because it's animal product though not directly meat.
To my knowledge there is, however, only one restaurant in Montreal that serves entirely vegan poutine with vegetable-based sauce. It tastes almost exactly like the more common version.

Seeing as the antibodies you get from a tetanus shot come from a horse does this go against veganismness?
It's still a product of the animal like milk would be.

I'm pretty sure animal-derived vaccines are considered non-vegan, since they do involve
exploiting animals for human gain - I kinda wonder how a vegan feels when he gets bitten
by a snake, and the only thing that'll save his life is antivenin derived from a horse...
