That sounds delicious. What kind of cheese? A place I used to work had apple and brie sandwiches (not toasted/grilled) in their cafe. Mmm...

just normal cheese- a brand we like is 'coon' extra tastey. :) anything works really, so long as the cheese's flavour isn't too strong.

oh yeah, and what you do is, you get an apple (i prefer red) and slice it so each slice is a few millimetres thick- the same with the cheese. lay the apple out so it overlaps each piece slightly on a piece of bread, lay the cheese on the top in the same way, add optional salt and pepper, and put into a (horizontal
) toaster foccacia-maker until the cheese is all melty :) mmmmmm. i want now.

Hmmm...  Lots of people put cheese (typically a sharp-ish cheddar) on apple pie.
This seems a logical enough shortcut.

I've only tried it once, and I loved it.
